While we work to affirm our commitment to small-scale\, climate-friendly food systems every day\, Earth Day is a chance to dig in. This year\, we are centering our celebration on the importance of soil health\, which our food systems and ecosystems so vitally depend on. \nDespite the importance of this precious natural resource\, the health of our soil is at risk\, which carries direct consequences for food security and ecological resilience. Half of the topsoil on the planet has been lost in the last 150 years. Widespread soil degradation is deeply tied to poor agricultural practices\, which leads to erosion\, soil contamination\, and the decline of soil fertility. To confront this serious issue\, the inconspicuous yet powerful cover crop is here to save the day. As a traditional regenerative farming practice\, cover crops are strategically planted to protect and enrich the soil in between harvests. They help to actively improve soil health by rebuilding organic matter and supporting a beneficial microbial community. Their roots help the soil bind together\, preventing erosion and runoff\, which aids increased water retention and better resistance to pests and disease. These soilfriendly practices may even present a promising climate solution by sequestering carbon from the atmosphere and storing it in the soil below. \nFarmers plant a variety of cover crops to best suit the needs of their soil\, ranging from buckwheat\, rye\, and radishes to fava beans\, sunflowers\, and much more. Beans help fix nitrogen in the soil while other plants with narrower or deeper roots help with soil aeration and water filtration. After providing an array of benefits\, these cover crops are then turned into the ground as a nutrient-dense natural fertilizer while stabilizing the soil in preparation for the next season’s planting. This Earth Day\, we are challenging our chefs to creatively integrate plants used as cover crops into our menus to raise awareness about the importance of protecting soil health (Check out some innovative cover crop recipes here!). The most common fillings are: al ragù or al sugo\, filled with ragù (meat or mince\, slow-cooked at low temperature with tomato sauce and spices)\, mozzarella and/or caciocavallo cheese\, and often peas\, and al burro or ô burru\, filled with ham and mozzarella or besciamella. \n

DESCRIPTION:Join us in the Draper cafe during lunchtime for our Heritage Challenge Spotlight\, where each week one of our staff members will prepare a dish representing their heritage.  This week our own Dereq De Costa will create Peri Peri. Here is what he says about this traditional dish: \nPeri-peri is a cultivar of Capsicum frutescens that was originally produced by Portuguese explorers in Mozambique from the malagueta pepper and then spread to other Portuguese territories. Pilipili in Swahili means “pepper”.\nOther romanizations include pili pili in the Democratic Republic of the Congo and peri peri in Malawi\, deriving from various pronunciations of the word in different parts of Bantu-speaking Africa. Peri peri is also the spelling used as a loan word in some African Portuguese-language countries\, especially in the Mozambican community. The peri-peri spelling is common in English\, for example in reference to African-style chili sauce\, but in Portuguese it’s nearly always spelled piri-piri.\nLike all chili peppers\, piri piri is descended from plants from the Americas\, but it is now cultivated commercially in Zambia\, Uganda\, Malawi\, Zimbabwe\, and Rwanda. \nABOUT DEREQ:\nDereq Kyle De Costa is our most unique chef because he has a wealth of heritage from both sides of his family and his own life. His mother was from Portugal and his father was from Pakistan\, but Dereq himself was born in Zimbabwe and grew up in South Africa. In 2004 Dereq decided to move to the United States where he aspired to go to culinary school at Utah Valley University’s Culinary Arts Institute.\nDereq continued his culinary adventure where he has gained knowledge and experience from working at Panache Restaurant\, BRIO\, Willowcreek Country Club\, Hilton\, BYU\, Heirloom\, and every year he works at the Sundance Film Festival in Park City. Finally he found Bon Appetit where he has worked for the past 8 years.\nWhen it comes to food\, Dereq loves bringing people together through his food and he loves being the catalyst that starts those conversations and gatherings.\nFrom his diverse family and deep-rooted culture\, he has learned to always be positive\, upbeat\, work hard\, never quit\, and never give up. However\, he misses the atmosphere of Portugal. He misses alfresco dining\, fresh seafood\, eucalyptus trees\, futball\, festivals\, but most of all he misses his extended family.

DESCRIPTION:Join us in the Draper cafe during lunch time for our Heritage Challenge Spotlight\, where each week one of our staff members will prepare a dish representing their heritage.  This week our own Patty Flores will create Pellizacadas (Sope). Here is what she says about this traditional dish: \nA sope also known as picadita is a traditional Mexican dish originating in the central and southern parts of Mexico\, where it was sometimes first known as pellizcadas. It is an antojito\, which at first sight looks like an unusually thick tortilla with vegetables and meat toppings.\nThe base is made from a circle of fried masa with pinched sides. This is then topped with refried beans\, crumbled cheese\, lettuce\, onions\, red or green sauce\, and sour cream. Sometimes other ingredients are added to create different tastes and styles of sopes; they are roughly the size of a fist. \nABOUT PATRICIA (PATTY)\nPatricia comes from the Kora (Cora) people. The Cora are an indigenous ethnic group of North-Western Mexico that live in the municipality Nayar\, Rosamorada\, Ruiz\, Tepic\, Mezquital Durango in the Mexican state of Nayarit and in a few settlements in the neighboring state of Jalisco. She moved here to the United States in 1991 where she came by bus.\nMexican tradition has permeated her lifestyle of hard work determination. She has worked with Bon Appetit for two years and two months\, but she has had a wealth of knowledge from other kitchens and food industry businesses. The most important teacher was her own culture.\nPatricia loves cooking real Mexican food from her culture\, people\, and country. She loves the freshness of Mexican cuisine such as fresh fruits\, ceviche\, tamales\, agua frescas and seafood.\nThere are some things however are not the same here in the United States. For example\, she misses the Nayarit Fair. This is where the true essence of Mexico is best experienced. There are fairs\, religious festivities\, and other colorful ancestral celebrations\, all of them vibrant with music\, chants\, food\, and fun. She is quoted as saying\, “Well\, I miss everything.”
